Creamy Curry Chicken Salad


Teens palates start to change and become more sophisticated as they get older. Once my daughter turned 14, she developed an interest in Curry. This salad is tasty. Even my husband likes it.

Creamy Curry Chicken Salad



3 breasts of chicken
3 stalks of celery
1 cup of mayonaise (light)
1/4 cup of honey
1/2 medium onion, diced
3 cloves of garlic
1 tsp. curry powder
1/2 cup of walnuts
1 cup of red grapes, sliced

Dice celery, garlic and onion in a medium size bowl. Stir in mayonnaise, honey, and curry powder. Add cubes of chicken, sliced grapes, and walnuts. Serve on a bed of mixed greens or on a slice of yummy bread for a scrumptious sandwich.

Down Home Comfort Soup


What's better than fresh tomato soup and a warm grilled cheese sandwich? This homemade tomato soup is easy to make and tastes so good. I asked for this recipe from Donna at the Auntie Em's Cafe and then customized it to my family's taste.

Terrific Tomato Soup

Saute one yellow onion and 6 cloves of garlic until golden

1 jalapeno pepper if you desire a little kick.
1 small red bell pepper

A pinch of salt and pepper

Roast 2 pounds of heirloom or beef steak tomatoes in the over at 375 degrees until the skin turns a little brown.
1/4 cup of Half and Half

Fill a pot of water with water. Add onions, garlic, jalapeno and tomatoes. Cover the pot and let it simmer for 45 minutes. Add another pinch of salt and pepper. If too thin, let it simmer and reduce some more to thicken. Let the soup cool, before you put it in the blender. Add the Half and Half and another pinch of salt and pepper. Heat again and serve. This soup tastes even better if you put it in the refrigerator over night and heat it up the following day. Chop some cilantro and sprinkle on top. Get some crusty bread and enjoy!

Honey-Lemon-Garlic Chicken


I served this last night to my teen and her friend. They loved it. It's slightly sweet, which teens love and very healthy (which I like). What makes this dish is the marinade. It's easy to make.
Garlic-Honey-Lemon Marinade
1 Tbsp fresh lime juice
1 Tbsp fresh lemon juice
2 1/2 Tbsp honey
2 Tbsp extra-virgin olive oil
2 cloves of garlic
Pinch of salt and pepper
Mix all together and pour over 4 chicken breasts in a ziplock bag. Marinade chicken for at least 3 hours. The longer the better. BBQ on a medium heat grill. The olive oil and honey prevent the chicken from sticking to the grill. Top the grilled chicken with my Summer Strawberry Salsa.

Foods Teenagers Love to Eat


When you have a teenager in the house, you need to prepare food to entice him/her to stay home for dinner. My Strawberry Salsa is so colorful and bursting with flavor. Serve it on top of grilled chicken, baked fish, or even with tortilla chips.
Summer Strawberry Salsa

Dice 20 strawberries, 1 avocado, 1/4 cup red onion, squeeze juice from 1 lime and 1 small lemon, 1 Tbsp. chopped cilantro and a pinch of salt and pepper. Mix together and refrigerate until ready to serve.
