Down Home Comfort Soup


What's better than fresh tomato soup and a warm grilled cheese sandwich? This homemade tomato soup is easy to make and tastes so good. I asked for this recipe from Donna at the Auntie Em's Cafe and then customized it to my family's taste.

Terrific Tomato Soup

Saute one yellow onion and 6 cloves of garlic until golden

1 jalapeno pepper if you desire a little kick.
1 small red bell pepper

A pinch of salt and pepper

Roast 2 pounds of heirloom or beef steak tomatoes in the over at 375 degrees until the skin turns a little brown.
1/4 cup of Half and Half

Fill a pot of water with water. Add onions, garlic, jalapeno and tomatoes. Cover the pot and let it simmer for 45 minutes. Add another pinch of salt and pepper. If too thin, let it simmer and reduce some more to thicken. Let the soup cool, before you put it in the blender. Add the Half and Half and another pinch of salt and pepper. Heat again and serve. This soup tastes even better if you put it in the refrigerator over night and heat it up the following day. Chop some cilantro and sprinkle on top. Get some crusty bread and enjoy!
